17 oz bran flakes
5 cups flour
5 tsp baking soda
2 cups sugar
2 tsp salt

Wet ingredients
4 eggs
1 quart buttermilk
1 cup oil (I haven’t tried substituting applesauce yet but I have a theory it would be good)

Mix thoroughly then add the bran flakes little by little until completely combined. Cover and place in refrigerator for 2 days. When ready to bake, preheat oven to 400 degrees. Grease muffin tin and spoon in batter. Bake for 20 minutes. Enjoy!
